Mother’s Day Brunch

The person you call mom is like no other person in the world. Take the time you need to celebrate together on this very special day with unique recipes you can try at home! Or, if cooking is not your thing, we have found some of the most quaint and picturesque spots in Johannesburg, Durban and Cape Town, perfect for this special occasion.

Quiche for you and mom – a savoury palate cleanser

This year for Mother’s Day we decided to start off with an old-faithful savoury favourite: The Western Omelette Quiche. Like most recipes for Mother’s Day, this quiche is a family favourite inspired by special moments you shared with mom in the kitchen all those years ago.

Blending the right flavours with a tasty colour palette, a quiche is the result of when a pie and an omelette are combined into one tasty meal. Let’s get cooking;

Ingredients:

  • 1 x 220mm deep dish pie shell
  • 4 x thinly sliced green onion pieces
  • Third cup chopped green pepper
  • Third cup chopped red pepper
  • 2 x tablespoon butter
  • 120 grams of sliced and folded smoked ham
  • Half cup of cheddar cheese grated
  • 1 x cup whipping cream
  • 6 x jumbo eggs
  • 1 x teaspoon garlic salt
  • Half teaspoon black pepper
  • Half teaspoon onion powder
  • Half teaspoon ground mustard

Cooking instructions:

  1. Preheat your oven to 180°C. Poke a few holes through the bottom of a frozen pie shell using a fork. Bake for 5 minutes. Set aside.
  2. Melt the butter in a small skillet. Cook the sliced green onion, green pepper and red pepper until softened for around 2-3 minutes.
  3. Layer a half the ham and half the shredded cheese right at the bottom of the pre-baked pie shell.
  4. Whisk together the whipping cream, eggs, and spices until fully combined. Add the cooked vegetables to the mixture.
  5. Pour one half over the first layer of ham and cheese, then repeat layering in sequence; ham, cheese, and mixture.
  6. Place onto a baking sheet and then into the oven. Bake for 10 minutes at 180° C.
  7. Lower the oven temperature ever so slightly (between 170° – 175° C) and continue to cook for an additional 30-40 minutes.
  8. Once ready, place on a counter and let it set for at least 30 minutes before serving.

The sweeter option – Tasty French Toast roll-ups

No Mother’s Day brunch is complete without a delicious option for all those moms with a sweet tooth. Try our recipe for French Toast Roll-ups! You’ll find that these bite sized treats are not only extremely easy to make but also the perfect amount of sweetness to compliment your first course.

Just like classic French Toast, these rolls-ups are dipped in either syrup or honey just before eating to add an extra layer of sweetness. The one big advantage to rolling them up means that you can add cinnamon sugar between the rolls to create a mouth watering treat.

What’s more? These delicious rolls are so easy to make that they’re likely to become a staple dessert option from here on out!

Ingredients:

  • 3 x tablespoons unsalted melted butter 
  • 3 x tablespoons granulated sugar
  • 2 x tablespoons brown sugar
  • 1 x tablespoon ground cinnamon
  • 2 x large eggs
  • Quarter cup milk
  • 8 x crustless slices of soft white bread
  • 3 x tablespoons butter (for sauté pan)
  • Organic maple syrup (when serving)

Cooking Instructions:

  1. Place 3 tablespoons butter into a plastic bowl and melt in the microwave. Using a fork, stir in 3 tablespoons granulated sugar, 2 tablespoons brown sugar and 1 tablespoon cinnamon until a smooth spreadable mixture forms. Set aside.
  2. Now, whisk eggs and milk into a shallow bowl and set aside as well.
  3. Using another small bowl, stir 2 tablespoons granulated sugar and 2 teaspoons cinnamon together. Set aside.
  4. After removing the crusts from each bread slice, roll one slice out to about 5mm  thickness with a rolling pin. Then, spread your spreadable butter mixture along each side, then roll. Repeat with all remaining bread slices and butter mixture until finished.
  5. Place 3 tablespoons butter in a large non-stick sauté pan and melt over medium heat. One at time, dip each roll into your mixture. Sauté each side of your roll-ups for 1-2 minutes until the texture becomes golden brown. Move to the counter top, sprinkle each roll-up generously with the cinnamon-sugar mixture, and serve immediately with maple syrup.
